Don Alfonso in Sant'Agata sui due Golfi ... Now I can not dwell Don2stelle to talk about the Michelin, but be aware that his star really deserves admiration and kitchen study ... as well as a visit from time to time (I went there 2 times:)

cod fritters and the tops of thistles
300 grams of cod
3 slices of bread soaked in milk 2 cloves garlic
50 g extra virgin olive oil 3 sprigs of brambles
salt
meticulously cut the cod, garlic and the tops of thistles, mix well well with the slices of bread soaked in milk, do the forms of stars and roll in flour. Fry slowly in a pan with olive oil. Serve by placing the stars in the dish of salt cod and a few sprigs of the tops of thistles.
